What is Konbu?
Konbu (also spelled Kombu) is an edible brown seaweed that has been valued in Japanese cuisine for centuries. It is the main ingredient for the famous dashi broth and is used in Asian cuisine for its mild, umami-rich flavors. Dried seaweed like that INAKA Konbu Dashima is particularly long-lasting and very versatile.

Why is Konbu so popular?
Konbu is low in calories but rich in minerals such as iodine, calcium and iron. Its mild, sea-fresh taste is the perfect basis for many Japanese dishes. Konbu is also a natural source of glutamic acid, which provides the “umami” taste.

👩‍🍳 Recipe ideas

🍲 Dashi broth with konbu & bonito

Preparation:

  1. Soak a piece of INAKA Konbu (approx. 10 g) in 1 liter of cold water for 30 minutes.
  2. Heat slowly, but do not let it boil. Once almost boiling, remove konbu.
  3. Add 10 g of bonito flakes, bring to the boil briefly, then let it steep for 5 minutes.
  4. Pour the broth through a fine sieve – the classic dashi is ready.

🥒 Asian cucumber salad with seaweed

Preparation:

  1. Soak a handful of INAKA Konbu in water (5-10 minutes), then cut into fine strips.
  2. Cut 1 cucumber into thin slices, sprinkle with salt and let sit for 10 minutes.
  3. Marinate both with 1 tbsp rice vinegar, 1 tsp sugar, 1 tsp soy sauce and a little sesame oil.
  4. Sprinkle with sesame seeds and serve chilled.
